At Le Comptoir, a bistro that opened last year and finally got its wine license in December, an owner, Adrien Angelvy, a native of St.-Tropez, knows his rosés well. He has assembled a growing list, 10 so far, mostly from France, and poured by the glass or the bottle. There are even a couple of magnums and a towering slender jeroboam (six bottles) of Château d’Esclans from Provence. For a cocktail, Whispering Berry: Crush 10 raspberries with 3 tablespoons lemon juice and 2 of agave nectar, add 4 tablespoons St-Germain elderflower liqueur, 1 cup rosé, ice; stir and strain into two wineglasses. Add ice and a few raspberries.
